how to make vegan pizza


After a low key London Sunday we decided to go home and make some pizza. We make vegan pizzas, which means there is no meat or cheese on them. But contrary to what you may think, our pizzas are always delicious, full flavoured, moist with a crisp base and easy to make (as you can see from the image). Find out how to make them here...

You'll need:
Medium pizza base
Some "mock meat" - a word about these. They're readily available canned, in Chinatown, and are made of fried gluten or seitan. You can get mock chicken, duck, fish and so one. Or, you can get something like veggie bacon or vegan sausages (we like Wicken Fen brand sausages and fillets; they are available at Sainsbury's. Today we used frozen vegetarian chicken nuggets, a vegan brand purchased at Wing Yip superstore in Cricklewood.
Young leaf spinach
Some tomato-based pasta sauce
Basil
Crumbled firm smoked tofu, or crumbled tofu marinated in sweet soy sauce (we like Kecap Manis ABC brand
Spices of your choice - curry, or Indonesian rendang, lodeh or gule
Mushrooms (preferably portobello)

Instructions:

1. Preheat the oven at 220C.

2. Get your base and spoon the pasta sauce on it, then layer with spinach leaves and mushrooms.

3. Get your spices and mix them into a thick paste.

4. Cut up your mock meat into thin strips. Place the mock meat into the paste and mix together, then marinate for a few minutes.

5. Layer onto your pizza, then sprinkle some finely chopped basil on top. Add some pepper to taste and dribble extra sauce on top.
6. Place in oven for 12-15 minutes, or until nicely sizzling.
7. Enjoy!
